There’s nothing more rewarding than treating your mum to something home-made as it shows the love and care you have put into it – be it a gift, a day out, or a home-cooked meal.

But if you are taking over the kitchen for the day to make a super tasty special meal, make sure it’s also easy to cook so that you can spend as much time as possible with ‘the woman in your life’ and other members of the family.

And when it comes to dessert, why not surprise her with something totally unexpected, such as Mango and Coconut Sticky Rice, a south East Asian dessert little known in Europe but absolutely delicious.

It comes courtesy of international Emmy nominated TV chef and cookery author Ching He Huang, who has become an ambassador of Chinese cooking around the world. Ching says: ‘Sticky rice is served at important festivals so that families ‘stick’ together. I think that sentiment is so apt for Mother’s Day. So if you are entertaining and cooking something special for your mum, why not try this fruity tasty dessert – something special and truly unique for your mum’.

Mango and Coconut Sticky Rice

Serves 4 Preparation time: 10 minutes Cooking time: 25 minutes

Ingredients

800ml coconut milk

200g sticky rice also known as glutinous rice

1 vanilla pod, deseeded

6 tablespoons soft brown sugar

pinch of salt

2 large ripe mangoes, peeled and stoned

For garnish – optional

Toasted desiccated coconut

Mint leaves

Method

1. Wash the rice well until the water runs clear to get rid of excess starch.

2. Pour the 600ml coconut milk to the wok. Add the rice, vanilla seeds and the pod, 2 tablespoons of soft brown sugar and salt. Stir and bring to the boil. Cook until all the coconut milk has been absorbed into the rice. Remove the vanilla pod.

3. Heat the rest of the coconut milk in a small bowl with another 2 tablespoons of the soft brown sugar and stir until the sugar has been dissolved.

4. Spoon the sticky rice into a bowl and invert onto a plate, make four servings in this way. Top with fresh mango slices, pour over some sweetened coconut milk and sprinkle over remaining brown sugar allowing it to melt.

Try it and taste it: who would have thought that rice and mango could be so utterly delicious?
